When using the mass delete to delete multiple galleries. It would be nice to have the following option. Instead of all images being deleted, it would be nice to be able to set an option so any images that exist, in the galleries being deleted, are assigned to a default gallery.

Good point...mass assigning to another gallery would do the trick.
