Is there anyway where we can set the number of characters displayed in a photo's caption? and when we click on the picture, it can display full text?
It's annoying how long captions will stretch the page.
or perhaps an option to display 'title', and caption will only be displayed when a user click on an image.

You would have to build your own custom layout to do that. In your custom layout, you could say: [caption length=20] and that would display the first 20 characters of your caption.
If you wanted to show and hide the rest of the caption, you could do it with some javascript fairly easily.
But there isn't anything out of the box that does that.
